Apple Pikelets

 

These Apple Pikelets are a delicious afternoon snack and great with a cup of tea. A twist on the usual recipe. It’s amazing how much sweetness the apple gives the pikelets!

Ingredients
  1. 2 eggs
  2. 350ml milk
  3. 2 tablespoons caster sugar
  4. 300g self raising flour
  5. 4 small eating apples
  6. 50g unsalted butter for frying
  7. Powdered icing sugar for decoration
Instructions
  1. Whisk eggs, milk and sugar together, then fold in flour. Add a pinch salt, cover, put aside for 30 minutes.
  2. Peel the apples, cut in halves, de-core, and slice thinly.
  3. Melt a knob of butter in a hot frying pan and add a dollop of the batter mix to form a pikelet. Lay 1 or 2 slices of apple of top of the batter then fry for a couple of minutes. Turn over and cook the other side. Repeat with rest of batter.
  4. Sprinkle with powdered icing sugar and serve hot.
Notes
  1. Great with a cup of tea! Try using banana or pear next time!
