  1. Leftover Christmas cake or store bought fruit cake
  2. Sherry, Brandy or Orange juice (optional)
  3. White chocolate buttons, melted
  4. Glacé cherries, chopped
  1. Using a food processor, whizz the cake into a crumb consistency. May need to be done in batches. Place into separate bowl.
  2. If mixture doesn't come together add enough of your chosen liquid (1-2 tablespoons) to bring the mixture together.
  3. Roll tablespoons of cake mixture together & place on tray with grease proof paper.
  4. Melt white chocolate either in microwave or bowl over hot water.
  5. Spoon white chocolate on top of cake balls & place chopped glacé cherries on top.
  6. Place in fridge to firm up and store in an airtight container in fridge until needed.
  1. Note: Cake can be broken down using your hands, but mixture won't be as moist as using the food processor.
