Peanut Butter Sweet Chilli Chicken

 

Peanut Butter Sweet Chilli Chicken is poached chicken breasts coated in a Peanut and Sweet chilli sauce with a hint of Sesame oil. Serve with steamed rice or noodles. YUM!

Poached chicken breasts coated in a Peanut and Sweet chilli sauce with a hint of Sesame oil. A tasty meal which can be served with steamed rice or noodles!

Ingredients
  1. 2 chicken breasts poached (click link below to view 'poached chicken' recipe)
  2. 4 cups of cooked mixed vegetables
  3. 1/2 cup peanut butter
  4. 1/3 cup sweet chilli
  5. 3 tsp sesame oil
  6. 2 tbsp soy sauce
  7. 1/3 cup water water
Instructions
  1. Poach the chicken breasts according to directions. Once cooled, slice chicken finely.
  2. In a medium saucepan, combine the peanut butter, sweet chilli, sesame oil, soy sauce and water. Stir over medium heat until combined. Reduce to a low heat and continue to stir.
  3. Add the sliced chicken and cooked vegetables.
  4. Stir over low heat for approx 3-4 minutes. Switch off heat and leave saucepan covered for another 5 minutes before serving.
Notes
  1. Serve with steamed rice or noodles.
