Ingredients
  1. 1 packet arrowroot biscuits, crushed
  2. 170g butter
  3. 2 packets raspberry jelly
  4. 2 cups boiling water
  5. 1 tin condensed milk
  6. Juice of 3 lemons (slightly more than 1/3 cup)
  7. 1 1/2 level tsp gelatine
  8. 1/4 cup boiling water
Jelly
  1. Melt the jelly crystals in the boiling water. Cool in fridge (jelly should not set fully in the fridge).
Base
  1. Melt the butter in the mircowave. Add the crushed biscuits and combine well. Press into lined lamington tin.
  2. In a medium bowl, mix condensed milk and lemon juice.
  3. Melt gelatine in 1/4 cup boiling water and add to the bowl. Mix in well.
  4. Spread over base and refridgerate. Once the lemon filling is fairly set, pour the jelly gently over the top. Refridgerate.
