A delicious salad tossed with olive oil and sundried tomatoes. Goes perfectly with a good steak!

Ingredients
  1. 200g mixed salad leaves
  2. 1 cup grated carrot
  3. 1/2 cup sundried tomatoes, drained and chopped
  4. 2 tbsp olive oil
  5. 3 tbsp sundried tomato dip
  6. 3 tbsp mayonnaise
  7. Salt
Instructions
  1. In a large bowl add the salad leaves, carrot and sundried tomato and toss to mix.
  2. In a small bowl, add the oil, sundried tomato dip, mayonnaise and salt to taste. Mix well.
  3. Pour the dressing over the salad and mix through. Serve immediately.
