Spaghetti Pie Using Spaghetti Squash


Here is a great recipe I love, Spaghetti Pie Using Spaghetti Squash. It has some unique ingredients that creates a low calorie and nutrient rich meal.

Spaghetti Pie Using Spaghetti Squash Instead Of Traditional Pasta

  1. 1 spaghetti squash (also known as vegetable spaghetti or calabash squash)
  2. 1/2 cup raw cashews, soaked in hot water for 10 minutes
  3. 2 teaspoons lemon juice
  4. 2 teaspoons water
  5. 2 Tablespoons olive oil
  6. 1/2 teaspoon salt
  7. 1/8 teaspoon onion powder
  8. 1/8 teaspoon sweet paprika
  9. 1/2 clove garlic
  10. dash of pepper
  11. 1 Tablespoon coconut oil
  12. 1 onion, chopped
  13. 1 small green capsicum, chopped
  14. 1 garlic clove, minced extra
  15. 250gm ground turkey or beef
  16. 1/2 teaspoon fennel seeds, crushed
  17. 250g tomato pasta sauce
  18. 1 teaspoon dried oregano, crushed
  19. 2 eggs, beaten
  20. 2 Tablespoons flax meal
  21. 2 Tablespoons nutritional yeast
  1. Wash the spaghetti squash, slice in half lengthwise and bake cut-side up in a 200 degrees C oven for 40 minutes, or until tender. Remove from oven and set aside to cool.
  2. Discard the cashew soaking water. Combine the cashews, lemon juice, water, olive oil, salt, paprika, garlic and pepper in a blender. Mix until completely smooth. Set this cashew spread aside.
  3. In a large skillet warm the coconut oil over medium-high heat. Add the onion, capsicum and extra garlic. Sauté for 3 minutes. Add the ground turkey and cook until the meat is brown and onion is tender.
  4. Stir in fennel seeds, pasta sauce, and oregano. Heat through. Remove from heat. Use a fork to scrape the spaghetti squash strands from the squash skins and place in a medium bowl.
  5. Add the eggs, flax meal and nutritional yeast. Mix until fully incorporated.
  6. Coat a 25cm pie plate with coconut oil. Press spaghetti squash mixture onto the bottom and up sides of pie plate, forming a crust.
  7. Spread the meat mixture over the crust. Sprinkle with the cashew spread.
  8. Bake in a 200 degree C oven for 20 to 25 minutes or until bubbly and heated through. Slice into wedges to serve.
Nutritional Analysis
  1. One serving equals: 289 calories.
  2. 19g fat, 347mg sodium, 19g carbohydrate, 5g fiber, and 16g protein.
