Ingredients
  1. 60g rice noodles
  2. 6 rice paper wrappers
  3. 6 large cooked prawns (remove skin and cut in half)
  4. 2 tbsp chopped fresh mint leaves
  5. 2 lettuce leaves, chopped
Dipping Sauces
  1. 4 tbsp sweet chilli
  2. 1 tsp sesame oil
  3. 3 tablespoons hoisin sauce
  4. 1 teaspoon finely chopped roasted peanuts
Instructions
  1. Boil rice noodles in a medium saucepan of water for approx 4 minutes until just cooked. And cold water and drain. so that the noodles don't stick together.
  2. Place 1 rice paper wrapper in a medium bowl of lukewarm water until just soft. Place on a clean tea towel and pat dry uning the towel.
  3. Put 2 prawn halves, a handful of noodles, mint and the lettuce in a row across the centre.
  4. Fold in uncovered sides of wrapper, then tightly roll to enclose the filling. Repeat with remaining rolls.
Dipping Sauce 1
  1. In a small bowl, mix the sweet chilli sauce and sesame oil.
Dipping Sauce 2
  1. In a small bowl, mix the hoisin sauce and peanuts.
Notes
  1. Serve the rice paper rolls with the sweet chilli sauce and hoisin-peanut dipping sauces.
